What you need:
2 tbsp butter
1 thinly sliced medium sweet onion
2 zucchini
3/4 tsp salt
1/4 tsp ground black pepper
1 chopped tomato
1/4 cup chopped basil leaves
2 tbsp Parmesan cheese, grated
What you do:
In skillet, melt butter on medium-high heat.
Add onion rings to skillet one at a time. Mix with butter. Cover.
Reduce heat to medium, remove cover. Cook 3 minutes, stirring constantly, until onions are golden brown.
Add zucchini, salt and pepper. Cover. Cook 5 minutes, stir once.
Add tomato, cook uncovered at least 2 minutes or until zucchini gets tender.
Stir in basil. Top with cheese.
